Ranch Recipe #2 Corn Salad

I have officially given this recipe
a
Ranch Recipe
designation.
This dish may not have been ‘there’,
(‘there’ defined as my parents’ patio,
under a grapevine arbor my father welded
out of pipe,
covered in lush grapevine to ward
off the hot South Texas sun,
or as a delicious by-product of my mother’s kitchen,
during the 60’s and 70’s),
but it could have been.
It would have fit in perfectly.
High praise indeed.
Side dishes on my mother’s menu
had to have a little sass,
a la Jalapeno Cheese Rice,
and the ability to stand up to
steak.

My Mother's recipe
Ingredients
  • 2 cans whole kernel corn - drained
  • 1 cup mayonnaise
  • 1 finely chopped red onion
  • chopped red pepper
  • chopped green pepper
  • medium size bag chili cheese Fritos
Instructions
Mix together and serve with chili cheese fritos

To set the stage even further,
follow the entertaining doctrine of my parents:
1.  If you take a bottle to someone’s house, leave it.
2.  Offer to bring something, but know you
will graciously be told ‘no thank you’.
Besides.. you will have your turn to shine in the kitchen for the next get-together soon enough.
3.  Allow your children to run around and play in the yard and fall asleep
in the back seat on the drive home.
4.  Play great music on the stereo.
5.  Walk people to their car when your guests begin to leave.

That sounds like my parents way of entertaining too. I can remember sleeping in the BACK WINDOW of an old Buick on the back roads coming home when I was a kid. A seatbelt? WHAT was that? lol And everyone drove with their windows down and tried to go fast enough to leave the dust behind. Yep..warm summer memories there! Recipe sounds really great! I will give it a try- Hugs-Diana

Are you sure your mom and mine didn't go to etiquette school together...'cause these are the rules I still live by with one more for good measure. Always offer to help clean up afterwards, but tell all guest no thank you when they ask...after all they're the guests!
Fritos has got to be one of the greatest inventions ever. It has to be one of the four food groups...right?
I'm reading this while hearing Julia with a Texas twang.

That is a delicious recipe. I've had that before I'm sure. I make a variation of that recipe only without the Fritos...(they never seem to last around here long enough to make into a salad. But our version substitutes CORN BREAD chunks...(left over of course) This works out great because if there is ever any left over (cornbread) I just freeze it until salad making time.

Love that photo of your parents-- they sound like quite the Host and Hostess!

I'm not sure what I liked better, the salad recipe or the picture you drew in my head of your parents while I was reading this.

I'll call it a toss up.

For one - that recipe sounds absolutely like "A Must".....
and 2nd: Oh how I miss the "get together days" of having company! Does anyone do that on a regular basis anymore??
Everyone seems too busy....
Maybe that should be my goal this year:)

Great salad! My Mom always used Del Monte, too and had most of these same rules for entertaining.

I love your retro recipes. Aren't Fritos delicious. I could eat a whole bag in a day. A handful here a handful there. My college boys will love this recipe.
