Once upon a time there were three little girls
headed to a county 4H foods and nutrition
contest.
Two prepared their dishes in my kitchen because
they were my daughters (Lauren and Katherine).
The third , Elizabeth, the daughter of my dear friend JB, created her wonderful
dish Broccoli Cornbread in her mother’s kitchen.
Broccoli Cornbread
is a family favorite and is now an honorary
member of
Ranch Recipes.
I prepared it today, along with a pot of my vegetable beef soup for
another dear friend.

Broccoli Cornbread
2 boxes Jiffy Cornbread mix
1 small carton cottage cheese
4 beaten eggs
1 box thawed chopped broccoli
1 stick melted butter
Mix all ingredients and bake at 350 degrees until done.
Enjoy!

Oh My ! I had some homemade beef and veggie soup for dinner but no broccoli cornbread. Bet it it was yummy. Thanks for sharing the recipe.

Just don't ask me the nutritional value of a stick of butter. :) It would not be considered a ranch recipe but one of my biggest food memories is of Lauren and I trying to make 1-2-3-4 cake. I think it was just our excuse to open a tub of frosting.
I might give this cornbread a try tonight to go with my chicken noodle soup.
And I see your cloches..... sitting empty......

I remember that day as I was one of the judges. So fun!! Those 4-H years really gave us some great memories and certainly taught our kids a lot.
