Ranch Recipe#12: Easy Corn Casserole

Add to that humble, pantry ingredients, and I am sold.

This is just such a recipe.

Easy Corn Casserole

prep time: 15 MINScook time: 45 MINStotal time: 60 mins
This easy corn casserole recipe is perfect for family gatherings.

INGREDIENTS:

  • 1 (15 1/2 oz) can of cream style corn
  • 1 (15 1/2 oz) can whole kernel corn, drained
  • 1 cup sour cream
  • 1 stick melted butter
  • 1 box Jiffy cornbread mix
  • 1 1/2 cups grated cheese

INSTRUCTIONS:

  1. In a large bowl, stir together the 2 cans of corn, cornbread mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with cheese. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

Sounds like a good emergency dish to keep the ingredients on the shelf to make. I'd only have to remember to buy sour cream. Stopped keeping it unless there was a recipe I needed it for because once upon a time in the middle of the night I discovered that a lot of dill weed stirred into it made a tasty quick dip. Too tempting!
