Summer Salad

I must confess I went down movie memory lane

while making this salad last night.


Why?

Why this handsome devil of course.



You need to make this salad one evening and eat it while watching

 

Cool Hand Luke, Hud, and Cat on a Hot Tin Roof.


Mercy…

 

Next warning-

when buying these peppers have an armed car waiting.

They are that expensive.


Oh well.

I bought an orange pepper and a green pepper too.

Black Bean Corn Salad

2 cans black beans drained, rinsed, and chilled

1 16 ounce package of frozen whole kernel corn, thawed

diced purple onion

chopped green, red, orange, and yellow bell pepper

combine gently and drizzle with Balsamic Vinaigrette

salt and pepper to taste

Note: thaw the corn in the refrigerator so it stays chilled


Enjoy!

Well... thanks for the great recipe! The peppers have been so expensive all year long, so we decided to plant some in our garden this year... we've got peppers... but Ricky has to be careful to pick them daily... I don't we've had one without a sun-scorch spot on them!

I too, make this all the time.. a family favorite.
Try it sometime with just a Roma tomato or 2 & then instead of Newman's...just sprinkle a pkg. of dry ranch dressing over & toss... then eat with nacho chips... I put in the middle of the table while we are grilling steaks.. before the steaks are done, the kids have eaten the whole bowl & are not hungry for the real dinner...
happens every time.. : )
(Do you have an "Aldi's" near by?? peppers are usually much cheaper than the grocery store I go to )

I love that salad and make it every 4th of July although I've never invited Mr Newman to enjoy it with me. I'll definitely be giving that a try!

Your salad looks delish! Know what you mean about the price of the peppers. I was at the grocery a couple of days ago and over heard a conversation about how "they refused to pay that price" for them. Glad they were not on my grocery list to buy. :D

I do this salad using fresh mexican mangos instead of the corn, and also add cilantro and avocadoes. so good.

I make this same salad but with 1 large tomato added and a homemade dressing:

1/2 cup Italian dressing; 1/4 cup minced fresh cilantro; 3/4 tsp hot sauce; 1/2 tsp garlic powder.

Goes great with avocado and grilled fish. A perfect summer salad.

That looks beautiful and refreshing! I used the same Neumans dressing on a pasta salad last week and although it tasted good, it makes an UGLY pasta salad. too dark.
