Flat Apple Pie

Everyone who blogs knows all about The Pioneer Woman, and you probably have her cookbook, as I do.

In fact my daughter, who lives in Dallas, went to her book signing on my behalf last year, but

the line was too long.

Last Christmas,

I bought copies for all three of my daughters and two of my dear friends, Mary Jo and Anna.

One of my favorite recipes is Pioneer Woman’s

Flat Apple Pie.

Oh my.

It is rustic and earthy and approachable and delicious,

and in my family

looks like a single serving.

There I said it.

So make two.

You’ll be glad you did.

Who decided what a serving was anyway?

Laura, you are so funny!! In our family that would probably be one serving as well.
See ya soon! (I know... lucky me!)

The same person who said that an Almond Joy contains two servings. Really...for who, mice?
I don't have her cookbook, but it looks like that just went on the wish list. I'm picturing it with cheese baked inside!

I don't have her book yet, but I got to meet her at the Where Women Cook event in NYC. She's a sweetie pie. I asked her how she does all she does - I mean, the blog, the recipes, the homeschooling, the photography, the ranch, etc. She said, "You guys have no idea what I DON'T get done." I told her that I was mightily impressed by what she DOES get done!

Now I have to try making that pie.
