Birthday Party Menu ?

On Sunday, my father will be 83, and I am planning the menu for a late lunch/early supper at our house .

There will be 6 of us, and I want the menu to please everyone: my husband, daughter # 2, my father of course, my brother, and my teenage nephew.

So this is what I may do.

Shrimp Cocktail with avocado chunks, onion, cilantro and cocktail sauce

King Ranch Chicken

Green Salad

Frijoles a la Charra (my husband’s recipe)

Chocolate Sheet Cake with Chocolate Icing (with pecans)

and a…

Scoop of Blue Bell Homemade Vanilla Ice Cream

Hola Laura,

It was so nice of you to stop by for a visit. Home for us is Weslaco, TX in the Rio Grande Valley, by the Mexico border. Are you familiar with the area? I browsed around your blog and found it totally adorable!

My sister Jessica and I own www.joymaries.com an online boutique. I am a single mom of 2 teenages kids and work full-time in sales/safety. Jessica worked for several years as a Registered Nurse at an elementary, but now she takes care of her kids and helps at her husband who is an optometrist. We are Christian conservatives and we are proud of our hispanic heritiage. We try to capture our heritiage in our designs. Our father was bigger than life; typical Hispanic Macho Man. He is in heaven now, and probably helping guard the gate. Our mother is our role model and we try to follow in her footsteps. God is the center of our extended family and the focus in our homes. Jessica designs the jewelry and I sew. It is a busy adventure and a blessed life.

Laura, what a sweet daughter you are. Seeing the chocolate sheet cake on the menu made me think of MY Daddy. That was his very favorite, and one of us had to fix it for every get-together. He liked it because the icing was just like fudge. I haven't had it for awhile. Have a wonderful weekend.

Wow! What I think is that I would love to come to your party! The menu sounds wonderful. Hope you have a happy celebration with your dad and family! My Dad will be 85 on his next birthday -- grateful for every celebration that God grants us the time to enjoy together -- precious and sweet.

What a menu for the birthday boy! While I personally love birthday cake with butter cream frosting (I'll get it for myself for no reason), no party in Texas is complete without Texas Sheet Cake!
